Pumpkin soup and peanut butter

1 tablespoon olive oil

An average of 1 potato

1 large onion, chopped

Garlic 1 finely chopped

1 cup chopped pumpkin

1 cup chopped tomatoes

4 cups chopped vegetable extract

1 chopped red or yellow bell pepper

Thyme a quarter of a teaspoon

Peanut butter 3 tbsp

1 hot red pepper (optional)

Preparation method:

Heat the oil and add onion, garlic, bell pepper and (if desired, red pepper) and put in the pot. Stir every 5 minutes. Add pumpkin, tomatoes, vegetable extract, thyme, salt and pepper and cook for 45 minutes after boiling. Add the peanut butter and mix well, then pour into the mixer and mix. Heat for another 10 minutes and measure the salt and pepper and serve. If you wish, you can also use finely chopped parsley in this soup.
